Serves: 4 – 6

 

You will need a rolling pin to roll out your Roti’s

 

Ingredients:

  • 3 Cups flour
  • 3 Tablespoons of cooking oil
  • Boiling Water

 

Method:

  1. Sift flour into a large mixing bowl
  2. From the sifted flour take out half a cup of the flour to use when rolling
  3. Make a well in the middle of the remaining flour and add in the oil
  4. Add the boiling water to the top of the well
  5. Using a spoon, combine the flour and water into a soft dough (more water can be added)
  6. Cut of small balls of dough and roll into a circle on a floured top
  7. Cook the roti’s on a heated flat top frying pan until light brown on either side.
  8. Enjoy!

Ingredients:

  • 2 large firm tomatoes
  • Half an onion (either red or brown)
  • 1 green chilli or half a green pepper
  • Coriander

Method:

  1. Chop up your tomato and onion into medium sized pieces
  2. Add in your chopped chilli or green pepper
  3. Garnish with a few sprigs of finely chopped coriander
  4. Enjoy!
