It is full of flavour and very moreish indeed. The beans have a unique texture and form the base for the most delicious gravy. A definite must have.
Butter Beans Curry

Serves: 2 – 4 people
Ingredients
– 1 x 410g Butter Beans in a can
– Cook Durban Curry Kit – Butter beans curry
– 1 small onion – sliced medium
– 2 small tomatoes – diced fine
– 4 medium potatoes – peeled and halved
– 1 teaspoon Ginger and Garlic paste
– 300ml boiling water
– Coarse sea salt to taste – I use approximately 25g
– 80ml Sunflower oil
– Fresh Coriander
Method
1. In a large saucepan on medium heat, heat oil and whole spices from Pack 1.
2. When the spices start to sizzle, add the sliced onion and fry until they turn a light golden colour.
3. Add in contents of Curry Pack 2, ginger and garlic paste and 30ml of hot water, allow this to cook uncovered until the water has evaporated. Do not let your marsala burn.
4. Add in the diced tomatoes and salt, stir well and cook with lid on, stirring occasionally until the tomatoes have dissolved.
5. Add in the potatoes, 250ml of hot water stir well and cook with lid on, on a low heat, stirring occasionally until the potatoes have slightly softened.
6. Add the tin of beans, stir and cook with lid on until the potatoes have completely softened.
7. Your curry is cooked.
8. Garnish with coriander
9. ENJOY!
TIP: You may add approximately 200ml of hot water when your potatoes are cooking if you find that the water has evaporated and your potatoes have not softened.
