This lamb curry is simple enough to cook as a mid-week family dinner and equally delicious and elegant enough to impress your friends at your next dinner party.
Lamb curry with Potatos’
LAMB CURRY – WITH POTATOES
Preparation time: 10min
Cooking time: 50min
Total time: 60min
Serves: 4 – 6
Ingredients:
• 1.0-1.5kg lamb cubed on or off the bone
• Cook Durban Curry Kit – Lamb curry
• 1 Large Onion sliced medium
• 2 Large Tomatoes diced fine
• 4 Medium Potatoes peeled and halved
• 2 Tablespoons Ginger and Garlic paste
• 80 ml Sunflower Oil
• Coarse Sea Salt to taste – I use approximately 25g
• 300ml boiling water
• Fresh Coriander
Method:
1. In a large saucepan on medium heat, heat oil and whole spices from Pack 1.
2. When the whole spices start to sizzle, add onions and fry until light brown.
3. Add lamb cubes, the ginger and garlic paste and salt to taste, allow this to simmer with lid on for approx. 15min on a medium heat.
4. With a little liquid remaining add in the spices from Pack 2.
5. Stir well and allow this to cook for approx. 2 min.
6. Add chopped tomato and allow to cook with lid on until tomatoes have completely dissolved.
7. Add the potatoes, stir well and simmer for 5min with lid on.
8. Add 300ml of boiling water, cover and allow to cook, stirring occassionally until potatos are soft.
9. Your curry is cooked.
10. Garnish with coriander.
